Tortilla with crispy vegetables

Today I bring you a recipe for those healthy and quickies that we like so much. You can fill it with whatever you like, and of course the vinaigrette also to the taste of each one.

The tortilla I recommend to make it in a wide pan so that we can wrap the filling well. Like.

Tortilla with crispy vegetables
(For 3 people)

6 eggs
A bunch of parsley
120 gr. of lettuce
120 gr. of red cabbage
2 avocados
1 large carrot
Olive oil
SalPimienta
1 tablespoon of Dijon mustard
2 tablespoons of vinegar

We wash and mince small the lettuce and cabbage We reserve.
Peel and cut the carrots into strips. We reserve.
Peel and chop the avocados and put on top the juice of 1 lemon so that they do not rust. We reserve.
We beat two eggs, add the chopped parsley and salt and pepper. Paint a large pan with oil, put it on the fire and throw the eggs. We let curd on the one hand, we turn it over and when it is fully curd we remove it. We make two other tortillas the same with the rest of the eggs. We reserve. Now we make the vinaigrette: We mix well the two tablespoons of olive oil with the vinegar, mustard, salt and pepper.
We throw the vinaigrette on the vegetables that we have well drained and stir to take the flavor well .
We put each tortilla on a plate, fill it with vegetables and roll it up. It's ready to eat!
